About the coffee
Carlos Paz Sevilla is the owner and manager of the farm Altos de Erapuca, in the Arranca Barbara area of la Union, Copan. Altos de Erapuca is 21 hectares of pure red catuai, and sits at 1300 masl. The farm has been producing specialty coffee for a number of years, but with a focus on large volumes of washed coffee. This year Carlos started to produce micro-lots.
After some trials with processing cherries from Carlos' farm, the technical staff at Aruco found that macerating the cherries and processing them as a natural gave the best results. The cherries were picked and delivered to the Aruco mill, where they were sorted and cleaned before pre-fermentation. The cherries were macerated in tanks for 48 hours before being placed on raised beds to dry.
