ABOUT THE COFFEE PRODUCTION

Descamex company, established in 1980 by Mr. Domingo Muguira Revuelta, was the first decaffeination facility in Latin America. Over the years, they have refined  methods to deliver top-notch taste, aroma, and consistency. This commitment has earned  global recognition for Mountain Water Process. The main focus on optimizing processes to ensure the highest quality and yield from the beans, achieving over 99% decaffeination through a patented water-based extraction method introduced in 1987, and certified organic in 2003. 

Water Process:

The process starts with a thorough physical and chemical analysis to determine the best conditions, then steam the beans to prepare them for extraction. The caffeine is extracted under controlled flow, temperature, pressure, and vacuum conditions, using a green coffee extract derived from the coffee beans. After extraction, the beans are gently dried using triple drying system, followed by a polishing step to enhance their quality.

COFFEE REGION

The coffee-growing region of Chiapas is situated in the southwestern part of Mexico, adjacent to Tabasco to the north. Chiapas has 88 coffee-growing districts, supporting over 70,000 families involved in coffee cultivation. In total, there are 180,000 hectares dedicated to coffee farming, with the most commonly grown varietals including Typica, Caturra, Bourbon, Catimor 129, and Mundo Novo.

The nutrient-rich volcanic soils of Chiapas create an ideal environment for cultivating high-quality coffee beans. Coffee production in Mexico supports over 515,000 jobs. The country has coffee trees spread across more than 700,000 hectares, with 98% of its production being Arabica coffee, placing Mexico as the 13th largest producer in the world. Mexican coffee holds significant economic and social value, ranking among the country’s key agricultural exports in international markets.
