ABOUT THE COFFEE PRODUCTION

 

Ethiopia ... is produced by Family Dukamo at Finca Gatta. Their farm is located at the heart of Shantawene Village with in 10km from Daye town in the midst of natural forest and indigenous tress which are expected to be older than 200 years. It is surround by rivers. To maintain natural shades and the fertility of the soil with consultancy of expertise from the ministry of agriculture various shade trees are planted in the farm. 

The first coffee plants were planted in 2013, and by 2017, the farm established its drying station, benefitting from the surrounding natural shade provided by the adjacent forest. Local residents, including women who actively engage in quality control and processing, are involved in plantation, harvesting, and processing, providing them with employment opportunities and fair wages.

 

COFFEE REGION

 

Sidama is one of Ethiopia’s most renowned coffee-growing regions, known for producing bright, elegant, and fruit-forward coffees. Located in the highlands of southern Ethiopia, Sidama offers ideal conditions for specialty coffee: high elevations, rich volcanic soils, traditional farming practices, and unique microclimates.

Coffees from Sidama are typically known for their floral aroma, citrus brightness, and natural sweetness, often with notes of berries, stone fruit, and jasmine.

 

ABOUT THE PROCESS

 

Our coffee is harvested through manual selective picking, ensuring only ripe cherries are chosen at the perfect moment. Once received at the mill, the freshly harvested cherries undergo a careful reception and quality check before moving on to the sleeping bag drying process. An opaque material that retains Moisture is used. The process alternates between open and closed stages. When the coffee is opened and spread evenly, normal drying occurs on the surface. In addition, periodically, the coffee is very well covered with material, as in a sleeping bag. This technique greatly increases fermentation and allows you to maintain the high density of the grain. Fruity notes usually accompany this technique.
